My boyfriend gave me Jamie’s Great Britain book as a Christmas gift. I love the book! The layout and photos are beautiful. I even like the rustic feeling of the paper. I got to stare at the book for numbers of occasions, but I haven’t tried any recipes until recently.

I like his recipes, but some are a little bit too complicated for me… and I was looking for a very simple recipe. This is it!!! So simple and delicious. Cucumber and dill are great combo ;)

Pickly Cucumber and Red Onion Salad with Loads of Dill (Recipe by Jamie Oliver)
Scratch a fork down and all around the length of a cucumber, then slice it on an angle into 1cm slices and put the slices into a bowl. Grate over half a peeled red onion, using the coarse side of a box grater. Add a few generous splashes of white wine vinegar and pinch or two of sea salt. Pick and roughly chop a very small bunch of fresh dill and sprinkle over. Leave for about 30 minutes to get cold and to marinate, if you can, before serving with a drizzle of rapeseed/extra virgin olive oil, to intensify the pickled flavors.
 
きゅうりとディルのサラダ (レシピ：ジェイミーオリバー)
きゅうりの皮にフォークで模様 (上から下に皮を裂く感じ) を入れ、1cmほどの薄さにななめにスライスしてボウルに入れる。紫オニオンを半分に切って皮をむいて、おろし器の荒い目ですりおろす。白ワインビネガーを2,3回多めにふりかけ、塩を2つかみ入れる。ディルを1にぎり分くらい荒めに切って全体にふりかける。30分くらい冷蔵庫で冷やしておく。食べる前にオリーブオイルをかけて召し上がれ♪
 

 
I cooked Roasted Cornish Hens long time ago, and I completely forgot to write about it… I found this on my Everyday Food cook book, and I loved the color of grapes – so pretty isn’t it? Plus, this is calling for Cornish Hens which are smaller birds than chickens which I liked as I am a bit scared of touching big whole chickens… lol. I couldn’t quite imagine how this dish will taste like because of using grapes, but it turned out really nice! Not too sweet at all. Everybody gets a small whole bird, so I think this is fantastic for entertaining guests ;)
 
ずいぶん前にコーニッシュヘン (チキンより小さな鶏) の料理を作ったのに、ブログに書くのをすっかり忘れてました・・・。このレシピもお気に入りの Everyday Food という本に掲載されている料理。紫と緑のグレープを使うので色がとってもきれい。大きさもチキンより小さな鶏を使うので、1人1羽で丁度いい感じ。グレープが入ってちょっと甘くなるのかな？っと思ったけど、そんな事全然なくおいしくいただきました！コーニッシュヘンが手に入らない場合には、鶏の胸肉でもオッケー。是非お試しあーれ♪
 

Roasted Cornish Hens with Grapes ｜ コーニッシュヘンとグレープのロースト

Ingredients (Serves 4)
1 1/2 pounds mixed red and green seedless grapes
8 shallots, root end intact, halved if large
6 springs thyme, plus additional leaves for hens
2 tablespoons olive oil
Coarse salt and fresh ground pepper
4 Cornish game hens (1 to 1 1/4 pounds each)

シャロット 8個 又は 小さな玉ねぎ
タイム 6本 + 葉
オリーブオイル 大さじ2
塩こしょう
コーニッシュヘン 4羽 又は 鶏胸肉 (一枚450gくらい)
 
Directions
1. Preheat the oven to 450F. On a rimmed baking sheet, toss the grapes and shallots with the thyme springs, olive oil, 1 teaspoon salt, and 1/4 teaspoon pepper.
 
2. Tie the legs with kitchen twine; nestle the hens among the grapes on the baking sheet, breast side up. Season the hens generously with salt and pepper; sprinkle with thyme leaves.
 
3. Roast, basting the hens occasionally with the pan juices, until an instant-read thermometer inserted in thickest part of the leg (avoiding the bone) registers 160F, 30 to 35 minutes.
 
作り方
1. オーブンを230度に予熱しておく。オーブン皿の中でグレープ、シャロット、タイム、オリーブオイル、塩小さじ1、こしょう小さじ 1/を混ぜ合わせる。
 
2. コーニッシュヘンの足をキッチン紐で結んで、胸を上にしてグレープの中に並べ、塩こしょう、タイムの葉をかける。
 
3. 予熱したオーブンに入れ焼く。時々オーブン皿に出た汁をコーニッシュヘンにかけて濡らしておく。30分から35分くらい焼いて、肉温度計を一番厚いところに刺して (この時骨の部分は避ける)、72度になっていれば出来上がり！
 

 
Cabbage rolls in Japan is a typical home cooking dish. Until recently I didn’t know this cuisine is originated in Poland and called Galumpkis. My mother cooks cabbage rolls using chicken stock and soy sauce base, Japanese style. Another cabbage rolls recipe I used calls for tomato juice, butter, and oyster sauce. It is very interesting to see different variations of cooking styles.
 
I wonder how traditional Polish style cabbage rolls taste like. My partner’s mother’s side is from Poland, so I would love to get his grandma’s Galumpkis recipe some day. I searched some Polish recipes online, and it seems like the traditional recipes use rice in the meat mix. Interesting!
 
ロールキャベツ作りに初挑戦！いつも実家ではコンソメとお醤油ベースのロールキャベツをおいしくいただいているけれど、この間お友達と持ち寄りパーティーをした時に食べた、バターたっぷりのトマトベースのロールキャベツを再現してみたくって、早速教えてもらったレシピを試してみました〜。コンソメのロールキャベツももちろんおいしいけれど、トマトベースもお洒落で美味。
 
ところでこのお料理、日本でも日常的な家庭料理になっているけれど、実はポーランドの伝統的な食べ物なのだそう。Galumpkisという名前で、本場のレシピはどうもお米をお肉に混ぜるようですね〜。こちらも気になります。うちの相方のお母さん方の家系がポーランド出身なので、是非伝統的なレシピも入手したいものです！でもそれまではこのレシピを使うことになりそう。バターたっぷりで召し上がれ♪
 
Cabbage Rolls ｜ ロールキャベツ

Ingredients (Serves 4)
1 whole cabbage
200g minced pork
1 onion
1 egg
1/2 JP cup (100ml) breadcrumbs
Salt and pepper to taste
Nutmeg to taste
1 tablespoon butter
 
■ For Sauce
1 JP cup salted tomato juice (200ml)
2 JP cups water (400ml)
1 chicken stock cube
2 tablespoons Worcestershire sauce
2 tablespoons sake or white wine
1 tablespoon ketchup
1 teaspoon oyster sauce
2 teaspoons honey
 
Dicrections
1. Steam the cabbage. Separate each sheet of cabbage, being careful not to tear. Microwave the cabbage for 2 to 3 minutes in 2 batches until soft enough to roll.
 
2. Prepare the meat. (a.) Chop onion, add vegetable oil, and microwave for 2 and half minutes. (b.) Add an egg to breadcrumbs and mix well. (c.) In a bowl, add minced pork, (a.) onion, (b.) breadcrumbs mix, nutmeg, salt/pepper and mix well with hands. Once mixed, separate to 8 to 10 balls.
 
3. Construct cabbage rolls. Using one sheet of cabbage per one meat ball, roll and form cabbage rolls.
 
4. Brown the rolls. In a skillet, add butter and lightly brown the cabbage rolls. Also saute the remaining cabbage sheets.
 
5. Boil the rolls. In a large pot, bring the sauce to boil. Add the cabbage rolls and remaining cabbage sheets and let it simmer for one hour or until soft.

キャベツ 1玉
豚挽き肉 200g
玉ねぎ 1個
卵 1個
パン粉 1/2カップ
塩こしょう 少々
ナツメグ 少々
バター 大さじ1
 
■ 煮込み用ソース
トマトジュース(有塩) 1カップ (200ml)
水 (圧力鍋の場合1カップ、無い場合2カップ)
固形スープのもと 1個
ウスターソース 大さじ2
酒 大さじ2
ケチャップ 大さじ1
オイスターソース 小さじ1
蜂蜜 小さじ2
 
作り方
1. キャベツをゆでる。まず1枚ずつ破らないようにはがし、ラップをしてレンジに約2～3分かける (量が多いので2回くらいにわける)。*巻けるくらいにやわらかくなればよい。
 
2. 具を準備する。(a.) 玉ねぎはみじん切りにしてサラダオイル小さじ1をふりかけ、混ぜてラップをかけてレンジで約2分半かける。(b.) パン粉に卵を加え箸で混ざるまでかき混ぜる。ボールに豚ひき肉、(a.) の玉ねぎ、(b.) のパン粉等、その他ナツメグ、塩コショウ、全てを入れ手でこねる。混ざったら、約8～10個に適当に分割する。(綺麗にまるめなくてよい)。
 
3. キャベツで巻く。キャベツの芯を包丁でそいで (芯の厚みを半分くらいに) 巻きやすくする。1枚のキャベツのに、先ほど分割した具を手前にのせ、まいて最後にまき終わりを爪楊枝でとめる。 全て同様にまいていく。
 
4. 焼き付ける。フライパンにバターをいれ、3. のロールキャベツをいれ、焼き色がつく程度まで両面を焼く。*この際、3. でもしのこったキャベツがあれば一緒に焼く。
 
5. 煮込む 。鍋に煮込み用ソースを全て入れ (この際、水の分量だけは圧力鍋の有無で変える)、煮立ったらロールキャベツを入れる (残ったキャベツも一緒に煮込む)。 圧力なべで約15分、なければ約1時間煮込む。
 

 
I was reading my friend’s blog the other day, and she was writing about her milk tea flan. Hmmm…. yum!!! When I saw the picture, it made me so hungry in midnight. A bit too late for eating again… but that didn’t stop me from making this dessert. I didn’t have tea leaves at home, so I just used tea bags and still turned out quite nice. Poor my busy boyfriend didn’t get to taste this because he had to fly to India… no worries baby, I will always help you finishing your dessert!
 
夜中にお友達のブログを読んでいたら、投稿にロイヤルミルクティーの写真が！おいしそ〜。彼女のブログを読んでいると、いつもおいしそうな食べ物が登場してくるので、かなり感化されてます。早速クックパッドでロイヤルミルクティーのレシピを検索。あった！家に紅茶の葉っぱは無いけど、ティーバックでもできるよね？っという事で試してみました。ティーバックだとちょっと薄いようだけど、それなりにおいしくできましたよ。4人分って書いてあったけど・・・次の日に一人で全部いただきました！あらら。
 

Milk Tea Flan ｜ ロイヤルミルクティープリン

Ingredients (Serves 4)
350cc milk
80cc cream
18g tea leaves
40g sugar
7g gelatin
4 tablespoon water
 
材料 (4人分)
牛乳 350cc
生クリーム 80cc
紅茶の葉 カレースプーン3杯（18g程度）
砂糖 40g
ゼラチン 7g
水 大さじ4
 
Directions
1. Add water in gelatin and set aside.
 
2. In a small sauce pan, heat milk over low heat. Add tea leaves and sugar to make milk tea. When the sugar melt completely, turn off the heat and add gelatin. Mix well.
 
3. Strain the milk tea mix and add cream. Pour the mix into small bowls or cups. When the mix cool down, place them into a fridge and chill. Once they are chilled completely, take them out of the fridge and serve with maple syrup or caramel sauce.
 
作り方
1. ゼラチンを水でふやかしておく。
 
2. 牛乳を弱火にかけ、温め、紅茶の葉、砂糖を加え、ミルクティーを作る。砂糖が溶けたら、火を止め、1.のゼラチンを加えてよく溶かす。
 
3. 2.を茶漉しでこし、生クリームを加え混ぜ、プリン型に入れる。荒熱が取れたら冷蔵庫に入れ、しっかり冷やして出来上がり。
 

 
When my mother, sister and niece were visiting me in Singapore last week, we bought butternut squash. My mom has never seen this vegetable before in Japan, and she was interested to try. Unfortunately we didn’t have a time to cook the butternut while they were here, since we were so busy with sightseeing. But after they left, I decided to use this butternut squash as soup. It turned out really nice. You can drink this soup either hot or cold. Yum yum yum!
 
家にあまっているかぼちゃがあったので、スープにしてみました！スープなら簡単にできるし、他にも野菜がたくさん入ってヘルシー。野菜が不足がちな私も、スープならするするっといただけます。出来立てはあつあつを、次の日は冷たいのを飲むのがおすすめ！1回作れば2度おいしい♪ 秋の素材でお試しあ〜れ。
 

Butternut and Apple Harvest Soup ｜ かぼちゃスープ

Ingredients (Serves 4)
•    2 tablespoons butter
•    2 large leeks (white and pale green parts only), chopped
•    1 large onion, chopped
•    1 large potato, peeled and cubed
•    2 cups cubed butternut squash
•    1 cup diced carrots
•    1 Granny Smith apple, peeled, cored, and sliced 1/4-inch thick
•    1 quart chicken stock
•    1/4 cup dry white wine (optional)
•    1/2 cup light cream
•    1/4 teaspoon ground nutmeg
•    salt and pepper to taste
•    2 tablespoons chopped chives
 
材料 (4人分)
•    バター 大さじ2
•    リーク 2本 (長ネギで代用可)、濃い緑部分は切って捨ててみじん切り
•    たまねぎ 大きめ1個、みじん切り
•    じゃがいも 大きめ1個、皮をむいてサイコロ切り
•    かぼちゃ (バターナッツがおすすめ) 2カップ (480ml) 、サイコロ切り
•    にんじん 1カップ (240ml)、みじん切り
•    青リンゴ 1個 (Granny Smithがおすすめ) 、皮をむいて芯を取ってスライス
•    鶏がらスープ 946ml
•    白ワイン 1/4カップ (60ml) 、もしあれば
•    生クリーム 1/2カップ (120ml)
•    粉ナツメグ 小さじ1/4
•    塩こしょう、適量
•    チャイブ、又は万能ねぎ 大さじ2、みじん切り
 
Directions
1. Melt butter in a large pot over medium heat. Stir in leeks and onions, and cook until the onion softens and turns translucent, about 5 minutes. Add potato, squash, carrots, apple, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer until the vegetables are soft, about 20 minutes.
 
2. Carefully puree the soup in batches in a blender, or use a stick blender to puree the soup right in the pot. Once the soup has been pureed, return it to the pot and stir in wine and cream. Season with nutmeg, salt, and pepper; simmer gently for 5 minutes. Ladle into bowls and garnish with chopped chives.
 
作り方
1. お鍋に中火でバターを溶かします。リークとたまねぎを入れ、透明で柔らかくなるまで5分ほど炒めます。次にじゃがいも、かぼちゃ、にんじん、りんご、鶏がらスープを入れて、沸騰させます。沸騰したら火を少し弱めて野菜が柔らかくなるまで20分ほど煮立てます。
 
2. 煮立てた野菜とスープを何回かに分けてミキサーにかけます。なめらかになったらお鍋に戻して、白ワインと生クリームを入れます。ナツメグ、塩こしょうで味を整えて5分ほど弱火でまた煮立てます。スープボウルに盛りつけて、上にチャイブをのせて出来上がり。
